Teochew Style Fried Hokkien Noodles (潮州炒福建面)
This Teochew style fried Hokkien noodles is a classic dish in Chaoshan (Teochew) cuisine, known for its savory flavors and chewy texture.
Ingredients
- 300g Hokkien noodles
- 100g pork belly, sliced
- 100g shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup bean sprouts
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 2 tablespoons vegetable oil
Instructions
- Boil the Hokkien noodles according to package instructions, then rinse with cold water and set aside.
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the pork belly and shrimp, and stir-fry until cooked. Remove from wok and set aside.
- Heat the remaining oil in the wok. Add garlic and stir-fry until fragrant.
- Push the garlic to one side of the wok and pour the beaten eggs onto the other side. Scramble the eggs until set, then mix with the garlic.
- Add the boiled Hokkien noodles, soy sauce, oyster sauce, sugar, and white pepper to the wok. Stir-fry until the noodles are evenly coated with the sauce.
- Add the cooked pork belly, shrimp, and bean sprouts to the wok. Stir-fry for another 2-3 minutes until everything is heated through.
- Transfer the fried Hokkien noodles to a serving dish and serve hot.
