潮州炒粿条 (Teochew Style Fried Kway Teow) is a classic dish from the Chaoshan (Teochew) Cuisine, known for its simple yet flavorful taste. This dish features flat rice noodles stir-fried with an assortment of ingredients, creating a harmonious blend of textures and flavors.
Ingredients
- 400g flat rice noodles
- 200g shrimp, peeled and deveined
- 100g Chinese chives, cut into 2-inch lengths
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1/4 teaspoon white pepper
- 3 tablespoons vegetable oil
Instructions
- Soak the flat rice noodles in hot water for 15 minutes, then drain and set aside.
- In a small bowl, mix together the soy sauce, oyster sauce, fish sauce, sugar, and white pepper. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok over high heat. Add the shrimp and stir-fry until pink and cooked through. Remove from the wok and set aside.
- Heat the remaining 2 tablespoons of vegetable oil in the wok. Add the minced garlic and stir-fry until fragrant.
- Push the garlic to the side of the wok and pour the beaten eggs into the center. Scramble the eggs until just set.
- Add the soaked rice noodles to the wok and stir-fry for 2-3 minutes.
- Pour the sauce mixture over the noodles and toss to coat evenly.
- Add the cooked shrimp and Chinese chives to the wok. Stir-fry for another 1-2 minutes until everything is heated through.
- Transfer the fried kway teow to a serving dish and serve hot.
