潮州炒豆腐 (Teochew Style Fried Tofu) is a classic dish from Chaoshan (Teochew) Cuisine, known for its light and fresh flavors. This dish features crispy fried tofu stir-fried with a savory sauce, creating a delicious and satisfying meal.
Ingredients
- 1 block of firm tofu, cut into cubes
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1 red chili, thinly sliced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
Instructions
- Press the tofu cubes between paper towels to remove excess moisture.
- In a small bowl, mix together soy sauce, oyster sauce, and sugar to make the sauce.
- Heat vegetable oil in a pan over medium heat, then add the tofu cubes and fry until golden brown and crispy. Remove and set aside.
- In the same pan, add garlic, red chili, and half of the green onions. Stir-fry until fragrant.
- Return the fried tofu to the pan, pour the sauce over the tofu, and stir-fry until the tofu is evenly coated.
- Garnish with the remaining green onions and serve hot.
