Teochew Style Steamed Chicken (潮州蒸鸡)

Ingredients

  • 1 whole chicken, about 3 lbs
  • 2 inches ginger, julienned
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon Shaoxing wine (optional)

Instructions

  1. Rinse the chicken and pat dry. Place the chicken on a heatproof plate.
  2. Spread the ginger, garlic, and green onions on top of the chicken.
  3. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, salt, white pepper, and Shaoxing wine (if using). Pour this mixture over the chicken.
  4. Prepare a steamer and steam the chicken over high heat for 45 minutes or until cooked through.
  5. Once done, carefully remove the plate from the steamer and pour the juices from the plate into a saucepan.
  6. Heat the juices in the saucepan until it comes to a simmer. Then, pour the hot juices over the steamed chicken.
  7. Serve the Teochew Style Steamed Chicken hot with steamed rice.
