Teochew Style Steamed Chicken (潮州蒸鸡)
潮州蒸鸡 (Teochew Style Steamed Chicken) is a classic dish from Chaoshan (Teochew) Cuisine, known for its light and fresh flavors. This dish is simple to prepare and highlights the natural taste of the chicken.
Ingredients
- 1 whole chicken, about 3 lbs
- 2 inches ginger, julienned
- 3 cloves garlic, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 tablespoon Shaoxing wine (optional)
Instructions
- Rinse the chicken and pat dry. Place the chicken on a heatproof plate.
- Spread the ginger, garlic, and green onions on top of the chicken.
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, salt, white pepper, and Shaoxing wine (if using). Pour this mixture over the chicken.
- Prepare a steamer and steam the chicken over high heat for 45 minutes or until cooked through.
- Once done, carefully remove the plate from the steamer and pour the juices from the plate into a saucepan.
- Heat the juices in the saucepan until it comes to a simmer. Then, pour the hot juices over the steamed chicken.
- Serve the Teochew Style Steamed Chicken hot with steamed rice.
