Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups basmati rice, rinsed and drained
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 4 cups chicken broth
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper, then place them in a large baking dish.
  3. In a bowl, combine the rinsed rice, chopped onion, minced garlic, turmeric, cumin, cinnamon, cardamom, and cloves. Mix well to combine.
  4. Sprinkle the rice mixture over and around the chicken in the baking dish.
  5. Pour the chicken broth over the rice and chicken.
  6. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  7. Remove the foil and continue baking for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
  8. Once done, remove from the oven and let it rest for 5 minutes before serving.
  9. Garnish with chopped fresh parsley before serving.
