Tepsi Dajaj (iraqi Chicken And Rice Casserole)
Tepsi Dajaj is a traditional Iraqi dish that consists of tender chicken and fragrant rice, baked together to create a flavorful and comforting casserole. This dish is perfect for a family meal or a gathering with friends, and it's sure to become a favorite in your recipe collection.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 cups basmati rice, rinsed and drained
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 4 cups chicken broth
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper, then place them in a large baking dish.
- In a bowl, combine the rinsed rice, chopped onion, minced garlic, turmeric, cumin, cinnamon, cardamom, and cloves. Mix well to combine.
- Sprinkle the rice mixture over and around the chicken in the baking dish.
- Pour the chicken broth over the rice and chicken.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
- Once done, remove from the oven and let it rest for 5 minutes before serving.
- Garnish with chopped fresh parsley before serving.
