Tepsi Kebab (spiced Lamb And Eggplant Casserole)

Ingredients

  • 500g ground lamb
  • 2 large eggplants, sliced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the ground lamb and cook until browned. Remove the lamb from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil and sauté the onions and garlic until softened.
  4. Add the tomatoes, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Cook for a few minutes until the tomatoes break down and the mixture becomes fragrant.
  5. Layer the sliced eggplants in a baking dish, then spread the spiced lamb mixture on top.
  6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil and bake for an additional 15 minutes until the eggplants are tender and golden brown.
  8. Garnish with fresh parsley before serving.
