Ingredients
- 1 block extra firm tofu, drained and pressed
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 4 burger buns
- Lettuce, tomato, and onion for topping
Instructions
- In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat.
- In a small bowl, whisk together the cornstarch with 2 tablespoons of water to create a slurry. Slowly pour the slurry into the saucepan, whisking constantly until the sauce thickens. Remove from heat and set aside.
- Cut the pressed tofu into 4 equal-sized patties. Heat a non-stick skillet over medium heat and add the tofu patties. Cook for 5-7 minutes on each side, or until golden brown and crispy.
- Brush the teriyaki glaze onto each tofu patty and continue to cook for an additional 1-2 minutes, allowing the glaze to caramelize.
- Toast the burger buns in the skillet until lightly golden. Assemble the burgers with lettuce, tomato, onion, and a glazed tofu patty on each bun.
