Teriyaki Tofu Tostadas (照り焼き豆腐のトスタダス)

Ingredients
- 4 small corn tortillas
- 1 block of firm tofu, drained and cubed
- 1/2 cup teriyaki sauce
- 1 cup shredded cabbage
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro
- 1 tablespoon sesame seeds
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes.
- Pour the teriyaki sauce over the tofu and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens and coats the tofu. Remove from heat.
- In a separate skillet, lightly toast the corn tortillas over medium heat until crispy, about 2 minutes per side.
- Assemble the tostadas by placing a layer of shredded cabbage on each crispy tortilla, followed by the teriyaki tofu, diced tomatoes, green onions, and cilantro. Sprinkle with sesame seeds and season with salt and pepper.
