Ingredients
- 1 lb sushi-grade tuna
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tbsp brown sugar
- 1 tsp grated ginger
- 2 cups cooked sushi rice
- 2 avocados, sliced
- 1/4 cup sesame seeds
- 4 green onions, thinly sliced
Instructions
- In a small saucepan, combine the soy sauce, mirin, brown sugar, and grated ginger. Cook over medium heat for 5-7 minutes, until the sauce thickens to a glaze consistency. Set aside to cool.
- Cut the tuna into small cubes and place in a bowl. Pour half of the teriyaki glaze over the tuna and toss to coat. Set aside.
- Using a ring mold or a small bowl, layer the sushi rice, avocado slices, and marinated tuna to create a tower. Carefully remove the mold to reveal the layered tower.
- Drizzle the remaining teriyaki glaze over the tuna tower and sprinkle with sesame seeds and sliced green onions.
