Teriyaki Tuna Tower (照り焼きまぐろのタワー)

Ingredients

  • 1 lb sushi-grade tuna
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • 2 cups cooked sushi rice
  • 2 avocados, sliced
  • 1/4 cup sesame seeds
  • 4 green onions, thinly sliced

Instructions

  1. In a small saucepan, combine the soy sauce, mirin, brown sugar, and grated ginger. Cook over medium heat for 5-7 minutes, until the sauce thickens to a glaze consistency. Set aside to cool.
  2. Cut the tuna into small cubes and place in a bowl. Pour half of the teriyaki glaze over the tuna and toss to coat. Set aside.
  3. Using a ring mold or a small bowl, layer the sushi rice, avocado slices, and marinated tuna to create a tower. Carefully remove the mold to reveal the layered tower.
  4. Drizzle the remaining teriyaki glaze over the tuna tower and sprinkle with sesame seeds and sliced green onions.
