Ingredients

  • 4 small eggplants
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tomatoes, diced
  • 5 red chili peppers, finely chopped
  • 3 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tamarind paste
  • 1 tablespoon sweet soy sauce

Instructions

  1. Preheat the grill to medium heat.
  2. Brush the eggplants with 2 tablespoons of vegetable oil and sprinkle with salt.
  3. Grill the eggplants for 5-7 minutes on each side until they are tender and charred.
  4. In a pan, heat the remaining 1 tablespoon of vegetable oil over medium heat.
  5. Add the shallots, garlic, and red chili peppers. Sauté until fragrant.
  6. Stir in the diced tomatoes, tamarind paste, sugar, and sweet soy sauce. Cook for 5 minutes.
  7. Place the grilled eggplants on a serving plate and pour the spicy sauce over them.
