Ingredients
- 2 large eggplants, sliced
- 1 cup shrimp paste
- 4 red chilies, finely chopped
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 tablespoon tamarind paste
- 2 tablespoons palm sugar
- Salt to taste
- Oil for grilling
Instructions
- Grill the eggplant slices until they are charred and tender. Set aside.
- In a pan, heat some oil and sauté the shallots and garlic until fragrant.
- Add the shrimp paste, red chilies, and tomatoes. Cook until the tomatoes are soft.
- Stir in the tamarind paste, palm sugar, and salt. Cook for another 2-3 minutes.
- Pour the spicy shrimp paste over the grilled eggplant slices.
