Ingredients

  • 2 large eggplants, sliced
  • 1 cup shrimp paste
  • 4 red chilies, finely chopped
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 tablespoon tamarind paste
  • 2 tablespoons palm sugar
  • Salt to taste
  • Oil for grilling

Instructions

  1. Grill the eggplant slices until they are charred and tender. Set aside.
  2. In a pan, heat some oil and sauté the shallots and garlic until fragrant.
  3. Add the shrimp paste, red chilies, and tomatoes. Cook until the tomatoes are soft.
  4. Stir in the tamarind paste, palm sugar, and salt. Cook for another 2-3 minutes.
