Terong Balado (sambal Eggplant Stir-fry)

Ingredients

  • 2 large eggplants, cut into cubes
  • 4 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 5 red chilies, finely chopped
  • 2 tomatoes, diced
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Heat 2 tablespoons of oil in a pan over medium heat.
  2. Add the eggplant cubes and stir-fry until they are cooked through and slightly browned. Remove from the pan and set aside.
  3. Heat the remaining 2 tablespoons of oil in the same pan.
  4. Add the chopped onion, minced garlic, and red chilies. Cook until the onions are translucent and the mixture is fragrant.
  5. Add the diced tomatoes, tamarind paste, sugar, and salt. Cook until the tomatoes are soft and the mixture thickens.
  6. Add the stir-fried eggplant back into the pan and toss to coat with the sambal sauce.
  7. Remove from heat and serve hot.
