Terong Balado (sambal Eggplant Stir-fry)

Ingredients
- 2 large eggplants, cut into cubes
- 4 tablespoons vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 5 red chilies, finely chopped
- 2 tomatoes, diced
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
Instructions
- Heat 2 tablespoons of oil in a pan over medium heat.
- Add the eggplant cubes and stir-fry until they are cooked through and slightly browned. Remove from the pan and set aside.
- Heat the remaining 2 tablespoons of oil in the same pan.
- Add the chopped onion, minced garlic, and red chilies. Cook until the onions are translucent and the mixture is fragrant.
- Add the diced tomatoes, tamarind paste, sugar, and salt. Cook until the tomatoes are soft and the mixture thickens.
- Add the stir-fried eggplant back into the pan and toss to coat with the sambal sauce.
- Remove from heat and serve hot.
