Tetovo Style Stuffed Cabbage Leaves (Тетовски полнети листови капусти)

Ingredients

  • 1 large head of cabbage
  • 500g ground beef
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried mint
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 can (400g) crushed tomatoes
  • 2 cups beef broth

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a bowl, mix together the ground beef, rice, onion, garlic, paprika, mint, salt, and pepper.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides to form a neat roll.
  4. Heat the vegetable oil in a large pot over medium heat. Place the stuffed cabbage rolls in the pot, seam side down.
  5. Pour the crushed tomatoes and beef broth over the cabbage rolls. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
  6. Serve the stuffed cabbage rolls hot, spooning some of the cooking liquid over each serving.
