Tfaya (spicy Lamb Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 lb ground lamb
  • 1 cup couscous
  • 1 large onion, thinly sliced
  • 1/2 cup raisins
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized.
  4. Add the ground lamb to the skillet and cook until browned. Stir in the cumin, cinnamon, cayenne pepper, and season with salt and pepper.
  5. Cook the couscous according to the package instructions.
  6. Once the lamb is cooked, stir in the cooked couscous and raisins. Remove from heat.
  7. Stuff the bell peppers with the lamb and couscous mixture.
  8. Place the stuffed bell peppers in a baking dish and bake for 30-35 minutes, or until the peppers are tender.
  9. Serve the spicy lamb stuffed bell peppers hot and enjoy!
