Thai (kare-kareng Kare-kare)
This Thai (Kare-Kareng Kare-Kare) recipe is a fusion of Thai and Filipino flavors, combining the rich peanut sauce of Kare-Kare with the aromatic spices of Thai cuisine.
Ingredients
- 1 lb oxtail, cut into 2-inch pieces
- 1 cup peanut butter
- 1 eggplant, sliced
- 1 bundle string beans, cut into 2-inch pieces
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 tbsp fish sauce
- 4 cups water
- 1/4 cup annatto seeds (achuete)
- Salt and pepper to taste
Instructions
- In a large pot, boil the oxtail in water until tender. This may take about 1 hour.
- In a separate pan, sauté the garlic and onion until fragrant.
- Add the peanut butter, fish sauce, and annatto seeds to the pan. Stir well.
- Pour the peanut sauce into the pot with the oxtail and simmer for 10 minutes.
- Add the eggplant and string beans to the pot and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
