Thalassery Biryani
Thalassery Biryani is a famous dish from the Malabar region of Kerala, known for its unique blend of flavors and fragrant rice. This biryani is traditionally made with fragrant rice, tender meat, and a rich blend of spices, creating a delicious and aromatic dish.
Ingredients
- 2 cups basmati rice
- 500g chicken, cut into pieces
- 1 cup thinly sliced onions
- 1/2 cup yogurt
- 2 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1 tablespoon ginger-garlic paste
- Whole spices: cinnamon, cardamom, cloves, bay leaves
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon biryani masala
- 1/4 cup ghee
- Salt to taste
- Fried onions for garnish
Instructions
- Wash and soak the basmati rice for 30 minutes. Drain and set aside.
- Marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, mint leaves, coriander leaves, and salt. Let it marinate for 1 hour.
- Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
- Add the sliced onions and green chilies. Sauté until the onions are golden brown.
- Add the chopped tomatoes and cook until they are soft.
- Add the marinated chicken and cook until the chicken is tender.
- In a separate large pot, bring water to a boil and cook the soaked rice until it is 70% done. Drain the rice and set aside.
- Layer the partially cooked rice over the cooked chicken in the pot.
- Sprinkle fried onions, mint leaves, and coriander leaves on top of the rice.
- Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and aromatic.
- Gently fluff the biryani with a fork before serving.
