Ingredients

  • 2 cups basmati rice
  • 500g chicken, cut into pieces
  • 1 cup thinly sliced onions
  • 1/2 cup yogurt
  • 2 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 1 tablespoon ginger-garlic paste
  • Whole spices: cinnamon, cardamom, cloves, bay leaves
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon biryani masala
  • 1/4 cup ghee
  • Salt to taste
  • Fried onions for garnish

Instructions

  1. Wash and soak the basmati rice for 30 minutes. Drain and set aside.
  2. Marinate the chicken with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala, mint leaves, coriander leaves, and salt. Let it marinate for 1 hour.
  3. Heat ghee in a large pot and add the whole spices. Sauté until fragrant.
  4. Add the sliced onions and green chilies. Sauté until the onions are golden brown.
  5. Add the chopped tomatoes and cook until they are soft.
  6. Add the marinated chicken and cook until the chicken is tender.
  7. In a separate large pot, bring water to a boil and cook the soaked rice until it is 70% done. Drain the rice and set aside.
  8. Layer the partially cooked rice over the cooked chicken in the pot.
  9. Sprinkle fried onions, mint leaves, and coriander leaves on top of the rice.
  10. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and aromatic.
  11. Gently fluff the biryani with a fork before serving.
