Thareed (spiced Lamb And Vegetable Stew)

Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 zucchini, sliced
  • 1 cup chickpeas, cooked
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 6 cups chicken or vegetable broth
  • 4 large pieces of Arabic bread (for serving)

Instructions

  1. In a large pot, brown the lamb chunks over medium-high heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the tomatoes, carrots, potatoes, zucchini, and chickpeas.
  4. Add the ground turmeric, cumin, coriander, cinnamon, salt, and pepper. Mix well.
  5. Pour in the broth and bring the stew to a boil. Reduce the heat, cover, and simmer for about 1.5 hours, or until the lamb is tender.
  6. Adjust the seasoning if needed.
  7. To serve, tear the Arabic bread into large pieces and place them in individual bowls. Ladle the stew over the bread and serve hot.
