Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk

Instructions

  1. In a large mixing bowl, combine rice flour, coconut milk, sugar, and salt. Mix well to form a smooth batter.
  2. In a small bowl, dissolve the baking soda in water and add it to the batter. Mix until well combined.
  3. Heat a non-stick pan over medium heat and lightly grease it with oil.
  4. Pour a ladleful of batter onto the pan and spread it into a round shape. Cook for 2-3 minutes until the bottom is golden brown.
  5. Flip the pancake and cook the other side for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more oil to the pan as needed.
  7. Serve the Thengai Appam warm with a sprinkle of grated coconut on top.
