Ingredients
- 2 cups rice flour
- 1 cup coconut milk
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 cup water
- Oil for cooking
Instructions
- In a large mixing bowl, combine rice flour, coconut milk, sugar, and salt. Mix well to form a smooth batter.
- In a small bowl, dissolve the baking soda in water and add it to the batter. Mix until well combined.
- Heat a non-stick pan over medium heat and lightly grease it with oil.
- Pour a ladleful of batter onto the pan and spread it into a round shape. Cook for 2-3 minutes until the bottom is golden brown.
- Flip the pancake and cook the other side for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more oil to the pan as needed.
- Serve the Thengai Appam warm with a sprinkle of grated coconut on top.
