Thenthuk (tibetan Style Noodle Soup)
Thenthuk is a traditional Tibetan noodle soup that is popular in Sikkimese cuisine. This hearty and comforting soup is made with hand-pulled noodles, vegetables, and your choice of protein, making it a perfect one-pot meal for any time of the year.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup water
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 cup shredded cabbage
- 1/2 lb boneless chicken, thinly sliced (optional)
- 6 cups chicken or vegetable broth
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine the flour and water to form a dough. Knead the dough for 5-7 minutes until smooth. Cover and let it rest for 30 minutes.
- Roll out the dough on a floured surface and cut into thin strips to make the noodles.
- Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and cook until translucent.
- If using chicken, add the sliced chicken to the pot and cook until browned.
- Add the carrots and cabbage to the pot and sauté for a few minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Add the hand-pulled noodles, turmeric, and salt. Cook for 10-15 minutes until the noodles are tender.
- Adjust the seasoning if needed and serve the Thenthuk hot, garnished with fresh cilantro.
