Thick Egg Noodle Soup (pancit Lomi)
Pancit Lomi is a popular Filipino Chinese noodle soup known for its thick, chewy egg noodles and flavorful broth. This comforting dish is often enjoyed as a hearty meal or during special occasions.
Ingredients
- 1 lb thick egg noodles
- 1/2 lb pork belly, sliced
- 1/2 lb chicken breast, sliced
- 1/2 cup shrimp, peeled and deveined
- 1/2 cup chicken liver, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1/4 cup soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon ground black pepper
- 2 hard-boiled eggs, sliced
- 2 cups shredded cabbage
- 2 stalks green onions, chopped
- 1/4 cup fried garlic (for garnish)
Instructions
- In a large pot, heat some oil over medium heat. Sauté the onion and garlic until fragrant.
- Add the pork belly, chicken breast, shrimp, and chicken liver. Cook until the meats are browned.
- Pour in the chicken broth and bring to a boil. Add the soy sauce, fish sauce, and ground black pepper. Simmer for 30 minutes.
- Add the thick egg noodles and cook for another 10 minutes or until the noodles are tender.
- Stir in the shredded cabbage and green onions. Cook for an additional 5 minutes.
- Divide the soup into bowls and top with sliced hard-boiled eggs and fried garlic.
