Thick Egg Noodle Soup (pancit Lomi)

Ingredients

  • 1 lb thick egg noodles
  • 1/2 lb pork belly, sliced
  • 1/2 lb chicken breast, sliced
  • 1/2 cup shrimp, peeled and deveined
  • 1/2 cup chicken liver, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon ground black pepper
  • 2 hard-boiled eggs, sliced
  • 2 cups shredded cabbage
  • 2 stalks green onions, chopped
  • 1/4 cup fried garlic (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Sauté the onion and garlic until fragrant.
  2. Add the pork belly, chicken breast, shrimp, and chicken liver. Cook until the meats are browned.
  3. Pour in the chicken broth and bring to a boil. Add the soy sauce, fish sauce, and ground black pepper. Simmer for 30 minutes.
  4. Add the thick egg noodles and cook for another 10 minutes or until the noodles are tender.
  5. Stir in the shredded cabbage and green onions. Cook for an additional 5 minutes.
  6. Divide the soup into bowls and top with sliced hard-boiled eggs and fried garlic.
