Ingredients

  • 1 pound thick rice noodles
  • 1/2 pound shrimp, peeled and deveined
  • 2 cups shrimp stock or seafood broth
  • 1 cup coconut milk
  • 3 tablespoons annatto powder
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1/2 cup tinapa (smoked fish), flaked
  • 1/4 cup chicharron (pork cracklings), crushed
  • 3 hard-boiled eggs, sliced
  • Salt and pepper to taste
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Boil the thick rice noodles according to package instructions. Drain and set aside.
  2. In a large pan, sauté garlic and onion until fragrant.
  3. Add the shrimp and cook until pink. Remove the shrimp and set aside.
  4. In the same pan, pour the shrimp stock and coconut milk. Add annatto powder and stir until well combined.
  5. Simmer the sauce until it thickens to your desired consistency.
  6. Season with salt and pepper to taste.
  7. Arrange the cooked noodles on a serving platter. Pour the shrimp gravy over the noodles.
  8. Top with the cooked shrimp, flaked tinapa, sliced hard-boiled eggs, and crushed chicharron.
  9. Garnish with chopped green onions before serving.
