Ingredients
- 1 pound thick rice noodles
- 1/2 pound shrimp, peeled and deveined
- 2 cups shrimp stock or seafood broth
- 1 cup coconut milk
- 3 tablespoons annatto powder
- 3 cloves garlic, minced
- 1 onion, chopped
- 1/2 cup tinapa (smoked fish), flaked
- 1/4 cup chicharron (pork cracklings), crushed
- 3 hard-boiled eggs, sliced
- Salt and pepper to taste
- 1/4 cup green onions, chopped (for garnish)
Instructions
- Boil the thick rice noodles according to package instructions. Drain and set aside.
- In a large pan, sauté garlic and onion until fragrant.
- Add the shrimp and cook until pink. Remove the shrimp and set aside.
- In the same pan, pour the shrimp stock and coconut milk. Add annatto powder and stir until well combined.
- Simmer the sauce until it thickens to your desired consistency.
- Season with salt and pepper to taste.
- Arrange the cooked noodles on a serving platter. Pour the shrimp gravy over the noodles.
- Top with the cooked shrimp, flaked tinapa, sliced hard-boiled eggs, and crushed chicharron.
- Garnish with chopped green onions before serving.
