Thiebou Dieune Yapp (dakar Dream)
Thiebou Dieune Yapp, also known as Dakar Dream, is a traditional Senegalese dish that features flavorful fish, rice, and vegetables. This hearty and aromatic meal is a staple in Senegalese cuisine and is perfect for sharing with family and friends.
Ingredients
- 1 whole fish, cleaned and scaled
- 2 cups of rice
- 1 onion, sliced
- 2 tomatoes, diced
- 1 eggplant, sliced
- 2 carrots, chopped
- 1 cabbage, cut into wedges
- 1 cup of pumpkin, cubed
- 1/2 cup of cooking oil
- 1/4 cup of tomato paste
- 2 cloves of garlic, minced
- 1 scotch bonnet pepper, whole
- 4 cups of water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the cooking oil over medium heat. Add the onions, tomatoes, tomato paste, garlic, and scotch bonnet pepper. Cook until the vegetables are softened and the mixture is fragrant.
- Add the fish to the pot and cook for 5 minutes on each side.
- Remove the fish from the pot and set aside.
- Add the water to the pot and bring to a boil.
- Stir in the rice, carrots, eggplant, cabbage, and pumpkin. Season with salt and pepper.
- Place the fish on top of the rice and vegetables, cover the pot, and simmer for 30 minutes or until the rice is cooked and the vegetables are tender.
- Remove the scotch bonnet pepper before serving.
