Ingredients
- 2 lbs lamb, cut into chunks
- 2 cups rice
- 1 onion, chopped
- 3 tomatoes, diced
- 1/2 cup tomato paste
- 1/4 cup vegetable oil
- 4 cups water
- 1/4 cup lemon juice
- 1/4 cup soy sauce
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large bowl, marinate the lamb with lemon juice, soy sauce, garlic powder, paprika, salt, and pepper. Let it marinate for at least 1 hour.
- In a large pot, heat the vegetable oil over medium heat. Add the marinated lamb and cook until browned on all sides.
- Add the chopped onion, diced tomatoes, and tomato paste to the pot. Cook for 5 minutes, stirring occasionally.
- Add the water and bring to a boil. Then, add the rice and reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Serve the Thiebou Djolof Yapp hot, garnished with fresh parsley if desired.
