Thiebou Djolof Yapp (exotic Essence)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 cups rice
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 1/2 cup tomato paste
  • 1/4 cup vegetable oil
  • 4 cups water
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, marinate the lamb with lemon juice, soy sauce, garlic powder, paprika, salt, and pepper. Let it marinate for at least 1 hour.
  2. In a large pot, heat the vegetable oil over medium heat. Add the marinated lamb and cook until browned on all sides.
  3. Add the chopped onion, diced tomatoes, and tomato paste to the pot. Cook for 5 minutes, stirring occasionally.
  4. Add the water and bring to a boil. Then, add the rice and reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Serve the Thiebou Djolof Yapp hot, garnished with fresh parsley if desired.
