Thiebou Guerte Yapp (coastal Comfort)

Ingredients

  • 1 lb fish fillets
  • 2 cups rice
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 carrot, sliced
  • 1 eggplant, cubed
  • 1/2 cup cabbage, shredded
  • 1/4 cup tomato paste
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, whole
  • 2 tbsp vegetable oil
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. Season the fish fillets with salt and pepper, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the tomato paste and diced tomatoes to the pot, stirring to combine. Cook for 5 minutes to develop the flavors.
  4. Add the fish fillets, whole scotch bonnet pepper, carrot, eggplant, and cabbage to the pot. Pour in the water and bring to a boil.
  5. Once boiling, reduce the heat to low and let the mixture simmer for 30 minutes, or until the fish is cooked through and the vegetables are tender.
  6. While the fish and vegetables are simmering, rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
  7. Remove the cooked fish and vegetables from the pot and set aside. Add the rinsed rice to the pot, stirring to combine with the tomato-based sauce. Arrange the fish and vegetables on top of the rice.
  8. Cover the pot and let the rice steam for an additional 20 minutes, or until fluffy and fully cooked.
  9. Once the rice is cooked, fluff it with a fork and serve the Thiebou Guerte Yapp hot, garnished with fresh herbs if desired.
