Thiebou Guerte Yapp (coastal Comfort)
Thiebou Guerte Yapp, also known as Coastal Comfort, is a traditional Senegalese dish that combines fish, rice, and vegetables in a flavorful tomato-based sauce. This hearty and comforting meal is a staple in Senegalese cuisine and is perfect for sharing with family and friends.
Ingredients
- 1 lb fish fillets
- 2 cups rice
- 1 onion, chopped
- 2 tomatoes, diced
- 1 carrot, sliced
- 1 eggplant, cubed
- 1/2 cup cabbage, shredded
- 1/4 cup tomato paste
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 tbsp vegetable oil
- 4 cups water
- Salt and pepper to taste
Instructions
- Season the fish fillets with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the tomato paste and diced tomatoes to the pot, stirring to combine. Cook for 5 minutes to develop the flavors.
- Add the fish fillets, whole scotch bonnet pepper, carrot, eggplant, and cabbage to the pot. Pour in the water and bring to a boil.
- Once boiling, reduce the heat to low and let the mixture simmer for 30 minutes, or until the fish is cooked through and the vegetables are tender.
- While the fish and vegetables are simmering, rinse the rice under cold water until the water runs clear. Drain the rice and set aside.
- Remove the cooked fish and vegetables from the pot and set aside. Add the rinsed rice to the pot, stirring to combine with the tomato-based sauce. Arrange the fish and vegetables on top of the rice.
- Cover the pot and let the rice steam for an additional 20 minutes, or until fluffy and fully cooked.
- Once the rice is cooked, fluff it with a fork and serve the Thiebou Guerte Yapp hot, garnished with fresh herbs if desired.
