Thiebou Kandja is a traditional Senegalese dish that features flavorful fish and vegetables cooked in a tangy tamarind sauce. This dish is a staple in Senegalese cuisine and is known for its rich and aromatic flavors.
Ingredients
- 1 whole fish, cleaned and scaled
- 2 cups rice
- 1 onion, chopped
- 2 tomatoes, diced
- 1 eggplant, sliced
- 1 carrot, sliced
- 1/2 cup tamarind paste
- 4 cups water
- 1 scotch bonnet pepper, whole
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
- Add the diced tomatoes, eggplant, and carrot to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the tamarind paste and water, then add the whole scotch bonnet pepper. Bring the mixture to a boil.
- Reduce the heat to low and add the seasoned fish to the pot. Simmer for 30 minutes, or until the fish is cooked through.
- While the fish is cooking, rinse the rice and cook according to package instructions.
- Serve the cooked fish and vegetables over the rice, spooning the tangy tamarind sauce on top.
