Ingredients

  • 1 whole fish, cleaned and scaled
  • 2 cups rice
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 eggplant, sliced
  • 1 carrot, sliced
  • 1/2 cup tamarind paste
  • 4 cups water
  • 1 scotch bonnet pepper, whole
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the fish with salt and pepper, then set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the diced tomatoes, eggplant, and carrot to the pot. Cook for 5 minutes, stirring occasionally.
  4. Stir in the tamarind paste and water, then add the whole scotch bonnet pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and add the seasoned fish to the pot. Simmer for 30 minutes, or until the fish is cooked through.
  6. While the fish is cooking, rinse the rice and cook according to package instructions.
  7. Serve the cooked fish and vegetables over the rice, spooning the tangy tamarind sauce on top.
