Ingredients

  • 2 lbs fish (such as red snapper or grouper), cleaned and scaled
  • 2 cups rice
  • 2 onions, sliced
  • 4 tomatoes, chopped
  • 1/2 cup tomato paste
  • 4 carrots, peeled and cut into chunks
  • 2 eggplants, cut into chunks
  • 4 hot peppers, pierced
  • 1 cup cabbage, chopped
  • 1 cup pumpkin, peeled and cut into chunks
  • 1/2 cup cooking oil
  • 4 cups water
  • Salt and pepper to taste

Instructions

  1. Season the fish with salt and pepper, then set aside.
  2. In a large pot, heat the cooking oil over medium heat. Add the onions and tomatoes, and cook until softened.
  3. Stir in the tomato paste and cook for 5 minutes.
  4. Add the carrots, eggplants, hot peppers, cabbage, and pumpkin to the pot. Stir to combine with the tomato mixture.
  5. Place the seasoned fish on top of the vegetable mixture in the pot.
  6. Add the water to the pot, cover, and simmer for 30 minutes.
  7. After 30 minutes, add the rice to the pot, making sure it is submerged in the liquid. Cook for an additional 20-25 minutes, or until the rice is tender and the fish is cooked through.
  8. Once the rice is cooked, remove the pot from the heat and let it sit for 5 minutes before serving.
