Thiebou Ndar (dakar Delight)
Thiebou Ndar, also known as Dakar Delight, is a popular Senegalese dish that features flavorful fish and rice cooked in a rich tomato sauce. This dish is a staple in Senegalese cuisine and is a perfect representation of the vibrant flavors and spices of the region.
Ingredients
- 2 lbs fish (such as red snapper or grouper), cleaned and scaled
- 2 cups rice
- 2 onions, sliced
- 4 tomatoes, chopped
- 1/2 cup tomato paste
- 4 carrots, peeled and cut into chunks
- 2 eggplants, cut into chunks
- 4 hot peppers, pierced
- 1 cup cabbage, chopped
- 1 cup pumpkin, peeled and cut into chunks
- 1/2 cup cooking oil
- 4 cups water
- Salt and pepper to taste
Instructions
- Season the fish with salt and pepper, then set aside.
- In a large pot, heat the cooking oil over medium heat. Add the onions and tomatoes, and cook until softened.
- Stir in the tomato paste and cook for 5 minutes.
- Add the carrots, eggplants, hot peppers, cabbage, and pumpkin to the pot. Stir to combine with the tomato mixture.
- Place the seasoned fish on top of the vegetable mixture in the pot.
- Add the water to the pot, cover, and simmer for 30 minutes.
- After 30 minutes, add the rice to the pot, making sure it is submerged in the liquid. Cook for an additional 20-25 minutes, or until the rice is tender and the fish is cooked through.
- Once the rice is cooked, remove the pot from the heat and let it sit for 5 minutes before serving.
