Thiebou Ndar Yapp (savory Sénégal)

Ingredients
- 2 lbs lamb, cut into chunks
- 1 cup peanut oil
- 2 onions, chopped
- 4 tomatoes, diced
- 4 garlic cloves, minced
- 1 tbsp tomato paste
- 2 cups rice
- 4 cups water
- 1 scotch bonnet pepper, whole
- 1 cup cabbage, chopped
- 2 carrots, sliced
- 1 eggplant, sliced
- 1 cup okra
- 1 cup spinach, chopped
- 1 tbsp thyme
- 1 tbsp parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat the peanut oil over medium heat. Add the lamb chunks and brown on all sides. Remove the lamb from the pot and set aside.
- Add the chopped onions to the pot and sauté until translucent. Stir in the diced tomatoes, minced garlic, and tomato paste. Cook for 5 minutes, stirring occasionally.
- Return the browned lamb to the pot. Add the rice and water, then place the scotch bonnet pepper on top. Cover and simmer for 20 minutes.
- Add the chopped cabbage, sliced carrots, eggplant, okra, and spinach to the pot. Season with thyme, parsley, salt, and pepper. Cover and cook for an additional 30 minutes, or until the rice and vegetables are tender.
- Remove the scotch bonnet pepper before serving. Enjoy the Thiebou Ndar Yapp hot, with a side of spicy Senegalese sauce if desired.
