Ingredients

  • 2 lbs beef, cut into chunks
  • 2 cups rice
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 4 carrots, sliced
  • 1 small cabbage, chopped
  • 4 garlic cloves, minced
  • 1/4 cup vegetable oil
  • 1 tbsp tomato paste
  • 1 scotch bonnet pepper, whole
  • 1 tsp thyme
  • 1 tsp ground ginger
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks with salt, pepper, thyme, and ground ginger.
  2. In a large pot, heat the vegetable oil over medium heat and brown the beef on all sides. Remove the beef and set aside.
  3. In the same pot, sauté the onions and garlic until fragrant.
  4. Add the tomato paste, diced tomatoes, and bay leaf. Cook for 5 minutes, then return the beef to the pot.
  5. Add 4 cups of water and the scotch bonnet pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. Add the carrots and cabbage to the pot and cook for an additional 10 minutes.
  7. Stir in the rice, making sure it's submerged in the liquid. Cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
  8. Remove the scotch bonnet pepper and bay leaf before serving.
