Thiebou Yapp (coastal Comfort)
Thiebou Yapp, also known as Senegalese Beef and Rice, is a flavorful and comforting dish that is a staple in Senegalese cuisine. This hearty one-pot meal is perfect for sharing with family and friends, and it's sure to warm your soul with its aromatic spices and tender beef.
Ingredients
- 2 lbs beef, cut into chunks
- 2 cups rice
- 2 onions, chopped
- 4 tomatoes, diced
- 4 carrots, sliced
- 1 small cabbage, chopped
- 4 garlic cloves, minced
- 1/4 cup vegetable oil
- 1 tbsp tomato paste
- 1 scotch bonnet pepper, whole
- 1 tsp thyme
- 1 tsp ground ginger
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season the beef chunks with salt, pepper, thyme, and ground ginger.
- In a large pot, heat the vegetable oil over medium heat and brown the beef on all sides. Remove the beef and set aside.
- In the same pot, sauté the onions and garlic until fragrant.
- Add the tomato paste, diced tomatoes, and bay leaf. Cook for 5 minutes, then return the beef to the pot.
- Add 4 cups of water and the scotch bonnet pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the carrots and cabbage to the pot and cook for an additional 10 minutes.
- Stir in the rice, making sure it's submerged in the liquid. Cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the scotch bonnet pepper and bay leaf before serving.
