Ingredients

  • 1 lb beef, cut into cubes
  • 2 ripe plantains, peeled and sliced
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 scotch bonnet pepper, chopped
  • 1 cup tomato paste
  • 2 cups water
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the tomato paste and cook for 5 minutes.
  5. Add the diced tomatoes and water. Season with salt and pepper. Cover and simmer for 45 minutes.
  6. Add the sliced plantains to the stew and cook for an additional 15 minutes until the plantains are tender.
  7. Adjust seasoning if needed and serve hot.
