Thieboudienne (spicy Beef Stew With Plantains)

Ingredients
- 1 lb beef, cut into cubes
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, chopped
- 1 cup tomato paste
- 2 cups water
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
- Add the beef cubes and brown on all sides.
- Stir in the tomato paste and cook for 5 minutes.
- Add the diced tomatoes and water. Season with salt and pepper. Cover and simmer for 45 minutes.
- Add the sliced plantains to the stew and cook for an additional 15 minutes until the plantains are tender.
- Adjust seasoning if needed and serve hot.
