Ingredients

  • 1 lb beef stew meat, cubed
  • 2 large sweet potatoes, peeled and diced

  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion, minced garlic, and red bell pepper to the pot. Cook until the vegetables are softened.
  3. Stir in the tomato sauce, beef broth, paprika, cayenne pepper, ground ginger, salt, and pepper. Bring the stew to a simmer.
  4. Add the diced sweet potatoes to the pot and stir to combine. Cover and simmer for 45-50 minutes, or until the beef is tender and the sweet potatoes are cooked through.
