Ingredients
- 1 lb beef stew meat, cubed
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 cup tomato sauce
- 2 cups beef broth
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp ground ginger
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion, minced garlic, and red bell pepper to the pot. Cook until the vegetables are softened.
- Stir in the tomato sauce, beef broth, paprika, cayenne pepper, ground ginger, salt, and pepper. Bring the stew to a simmer.
- Add the diced sweet potatoes to the pot and stir to combine. Cover and simmer for 45-50 minutes, or until the beef is tender and the sweet potatoes are cooked through.
- Adjust the seasoning if needed and serve the spicy beef stew with sweet potatoes hot.
