Thit Kho

Thit kho is a traditional Vietnamese caramelized pork dish that is simmered in a flavorful sauce until the meat is tender and the sauce is rich and sticky.

Ingredients

  • 1.5 lbs pork belly, cut into 1-inch cubes
  • 3 cloves garlic, minced
  • 1 shallot, thinly sliced
  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 1/2 tsp black pepper
  • 1 cup coconut water
  • 2 hard-boiled eggs (optional)

Instructions

  1. In a large pot, cook the pork belly over medium heat until the fat is rendered and the meat is browned.
  2. Add the garlic, shallot, fish sauce, sugar, and black pepper. Stir well to combine.
  3. Pour in the coconut water and bring the mixture to a boil. Then reduce the heat to low, cover, and simmer for 1.5 hours.
  4. If using eggs, add them to the pot during the last 30 minutes of cooking.
  5. Uncover the pot and increase the heat to medium. Cook for an additional 20-30 minutes, or until the sauce has thickened and coats the pork belly.
