Thit Kho
Thit kho is a traditional Vietnamese caramelized pork dish that is simmered in a flavorful sauce until the meat is tender and the sauce is rich and sticky.
Ingredients
- 1.5 lbs pork belly, cut into 1-inch cubes
- 3 cloves garlic, minced
- 1 shallot, thinly sliced
- 3 tbsp fish sauce
- 2 tbsp sugar
- 1/2 tsp black pepper
- 1 cup coconut water
- 2 hard-boiled eggs (optional)
Instructions
- In a large pot, cook the pork belly over medium heat until the fat is rendered and the meat is browned.
- Add the garlic, shallot, fish sauce, sugar, and black pepper. Stir well to combine.
- Pour in the coconut water and bring the mixture to a boil. Then reduce the heat to low, cover, and simmer for 1.5 hours.
- If using eggs, add them to the pot during the last 30 minutes of cooking.
- Uncover the pot and increase the heat to medium. Cook for an additional 20-30 minutes, or until the sauce has thickened and coats the pork belly.
