三杯雞 (Three-Cup Chicken) is a classic Taiwanese dish known for its rich and savory flavors. This recipe takes the traditional dish to the next level with an extravaganza of aromatic herbs and spices.
Ingredients
- 1.5 lbs bone-in chicken, cut into bite-sized pieces
- 1/4 cup sesame oil
- 1/4 cup soy sauce
- 1/4 cup rice wine
- 6 cloves garlic, minced
- 1 inch ginger, sliced
- 4-5 Thai basil leaves
- 2-3 red chilies, sliced
- 2 tbsp sugar
- 1/4 cup water
Instructions
- In a wok or large skillet, heat the sesame oil over medium heat.
- Add the garlic, ginger, and red chilies. Stir-fry until fragrant.
- Add the chicken pieces and cook until they start to brown.
- Pour in the soy sauce, rice wine, and sugar. Stir to combine.
- Add the water and Thai basil leaves. Cover and simmer for 15-20 minutes.
- Uncover and continue to simmer until the sauce thickens.
- Serve hot with steamed rice.
