Three-Cup Pork Belly (三杯豬肉)
三杯豬肉 (Three-Cup Pork Belly) is a classic Taiwanese dish that gets its name from the three key ingredients: soy sauce, sesame oil, and rice wine. The combination of these three flavors creates a rich and aromatic sauce that perfectly coats the tender pork belly slices.
Ingredients
- 1.5 lbs pork belly, cut into 1-inch cubes
- 1/4 cup soy sauce
- 1/4 cup sesame oil
- 1/4 cup rice wine
- 6 cloves garlic, minced
- 1 inch ginger, sliced
- 4-5 Thai basil leaves
- 2-3 small red chilies, sliced (optional)
- 2 green onions, chopped
Instructions
- In a wok or large skillet, heat the sesame oil over medium heat.
- Add the pork belly cubes and cook until browned on all sides, about 5-7 minutes.
- Add the garlic, ginger, and red chilies (if using) to the wok and stir-fry for 1-2 minutes until fragrant.
- Pour in the soy sauce and rice wine, then add the Thai basil leaves. Stir to combine.
- Cover the wok and let the pork simmer in the sauce for 45-50 minutes, or until the pork is tender and the sauce has thickened.
- Sprinkle with chopped green onions before serving.
