Thukpa Sha Phaley (tibetan Style Spicy Beef Noodles)

Ingredients

  • 500g beef, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tomatoes, diced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • Salt to taste
  • 4 cups beef or vegetable broth
  • 200g egg noodles
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are translucent.
  2. Add the beef to the pot and cook until browned.
  3. Stir in the tomatoes, cumin powder, coriander powder, chili powder, turmeric, and salt. Cook for a few minutes until the tomatoes are soft.
  4. Pour in the beef or vegetable broth and bring to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. While the broth is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
  6. Once the broth is ready, add the cooked noodles to the pot and stir to combine.
  7. Simmer for an additional 5 minutes to let the flavors meld together.
  8. Serve the Thukpa Sha Phaley in bowls, garnished with chopped green onions.
