Thukpa is a traditional Tibetan noodle soup that is popular in Sikkimese cuisine. It is a hearty and flavorful dish that is perfect for warming up on a cold day.

Thukpa (tibetan Style Thukpa)

Ingredients

  • 250g egg noodles
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 cup cabbage, shredded
  • 1 cup spinach, chopped
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp chili flakes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat some oil over medium heat. Add the sliced onion, carrots, and cabbage. Sauté for 5 minutes until the vegetables are slightly softened.
  3. Add the vegetable broth, soy sauce, ginger, garlic, and chili flakes to the pot. Bring to a simmer and cook for 10 minutes.
  4. Stir in the spinach and cooked noodles. Cook for an additional 2-3 minutes until the spinach wilts.
  5. Season with salt and black pepper to taste.
  6. Serve the Thukpa hot, garnished with fresh cilantro or green onions if desired.
