Thukpa (tibetan Style Thukpa)
Thukpa is a traditional Tibetan noodle soup that is popular in Sikkimese cuisine. It is a hearty and flavorful dish that is perfect for warming up on a cold day.
Ingredients
- 250g egg noodles
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 cup cabbage, shredded
- 1 cup spinach, chopped
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp chili flakes
- Salt to taste
- Black pepper to taste
Instructions
- Boil the egg noodles according to package instructions, then drain and set aside.
- In a large pot, heat some oil over medium heat. Add the sliced onion, carrots, and cabbage. Sauté for 5 minutes until the vegetables are slightly softened.
- Add the vegetable broth, soy sauce, ginger, garlic, and chili flakes to the pot. Bring to a simmer and cook for 10 minutes.
- Stir in the spinach and cooked noodles. Cook for an additional 2-3 minutes until the spinach wilts.
- Season with salt and black pepper to taste.
- Serve the Thukpa hot, garnished with fresh cilantro or green onions if desired.
