Thukpa (tibetan Yak Momo Soup)
Thukpa is a traditional Tibetan noodle soup that is hearty, flavorful, and perfect for warming up on a chilly day. This recipe features yak meat momos, adding a unique and delicious twist to the classic Thukpa.
Ingredients
- 1 lb yak meat, minced
- 2 cups all-purpose flour
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 2 carrots, julienned
- 2 stalks celery, sliced
- 4 cups beef or vegetable broth
- 2 tbsp soy sauce
- 1 tsp chili flakes
- 1 tsp ground turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the minced yak meat, chopped onion, garlic, ginger, soy sauce, chili flakes, turmeric, salt, and pepper. Set aside.
- Prepare the momo dough by mixing the all-purpose flour with water to form a smooth, elastic dough. Roll out the dough and cut into small circles.
- Place a spoonful of the yak meat mixture in the center of each dough circle. Fold and pleat the edges to seal the momos.
- In a large pot, bring the broth to a simmer. Add the carrots, celery, and momos to the pot and cook for 10-15 minutes until the momos are cooked through.
- Serve the Thukpa hot, garnished with fresh cilantro.
