Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 and 1/2 cups granulated sugar

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup shredded beets

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt.
  3. Add the milk, oil, and vanilla; beat for 2 minutes. Stir in the boiling water and shredded beets. The batter will be thin. Pour evenly into the prepared pan.
  4. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick.
  5. Cool in the pan on a wire rack.
