Ingredients
- 1 and 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 and 1/2 cups granulated sugar

- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1/2 cup shredded beets
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch pan.
- In a large bowl, combine the flour, cocoa, sugar, baking powder, baking soda, and salt.
- Add the milk, oil, and vanilla; beat for 2 minutes. Stir in the boiling water and shredded beets. The batter will be thin. Pour evenly into the prepared pan.
- Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick.
- Cool in the pan on a wire rack.
