Thuringian Cabbage and Bacon Stew (Thüringer Krauteintopf)

Ingredients
- 1 head of white cabbage, shredded
- 250g bacon, diced
- 2 onions, chopped
- 3 potatoes, peeled and diced
- 1 liter vegetable or beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the chopped onions to the pot and sauté until they are soft and translucent.
- Add the shredded cabbage and diced potatoes to the pot, and pour in the vegetable or beef broth. Add the bay leaves and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the cabbage and potatoes are tender.
- Once the stew is ready, remove the bay leaves and stir in the crispy bacon. Adjust the seasoning if needed.
- Serve the Thüringer Krauteintopf hot, with crusty bread on the side.
