Thuringian Cabbage and Bacon Stew (Thüringer Krauteintopf)

Ingredients

  • 1 head of white cabbage, shredded
  • 250g bacon, diced
  • 2 onions, chopped
  • 3 potatoes, peeled and diced
  • 1 liter vegetable or beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onions to the pot and sauté until they are soft and translucent.
  3. Add the shredded cabbage and diced potatoes to the pot, and pour in the vegetable or beef broth. Add the bay leaves and season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the cabbage and potatoes are tender.
  5. Once the stew is ready, remove the bay leaves and stir in the crispy bacon. Adjust the seasoning if needed.
  6. Serve the Thüringer Krauteintopf hot, with crusty bread on the side.
