Thuringian Cucumber Salad (Thüringer Gurkensalat)

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1/2 cup water
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh dill

Instructions

  1. In a large bowl, combine the sliced cucumbers and red onion.
  2. In a small saucepan, heat the white vinegar, sugar, and water until the sugar is dissolved. Remove from heat and let it cool.
  3. Pour the vinegar mixture over the cucumbers and onions. Season with salt and pepper, and toss to combine.
  4. Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  5. Sprinkle the chopped dill over the salad before serving.
