Thuringian Cucumber Salad (Thüringer Gurkensalat)
Thüringer Gurkensalat, or Thuringian Cucumber Salad, is a traditional dish from the Saxon cuisine of Germany. This refreshing salad is perfect for summer and pairs well with grilled meats or as a light side dish.
Ingredients
- 2 large cucumbers, thinly sliced
- 1 small red onion, thinly sliced
- 1/4 cup white vinegar
- 2 tablespoons sugar
- 1/2 cup water
- Salt and pepper to taste
- 2 tablespoons chopped fresh dill
Instructions
- In a large bowl, combine the sliced cucumbers and red onion.
- In a small saucepan, heat the white vinegar, sugar, and water until the sugar is dissolved. Remove from heat and let it cool.
- Pour the vinegar mixture over the cucumbers and onions. Season with salt and pepper, and toss to combine.
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
- Sprinkle the chopped dill over the salad before serving.
