Ingredients

  • 1 lb mixed mushrooms, such as porcini, chanterelle, and oyster, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Sprinkle the flour over the onion and garlic, and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.
  3. Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown.
  4. Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 20-25 minutes, allowing the flavors to meld together.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Remove the pot from the heat and ladle the soup into bowls. Garnish with fresh parsley before serving.
