Thuringian Forest Mushroom Soup

Ingredients
- 1 lb mixed mushrooms, such as porcini, chanterelle, and oyster, cleaned and sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Sprinkle the flour over the onion and garlic, and stir to combine. Cook for 2-3 minutes to remove the raw flour taste.
- Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 20-25 minutes, allowing the flavors to meld together.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the pot from the heat and ladle the soup into bowls. Garnish with fresh parsley before serving.
