Thuringian Liver Sausage (Thüringer Leberwurst)

Ingredients

  • 1 lb pork liver, finely chopped
  • 1 lb pork fat, finely chopped
  • 1 onion, finely chopped
  • 2 tsp salt
  • 1/2 tsp ground white pepper
  • 1/4 tsp ground allspice
  • 1/4 tsp ground marjoram
  • 1/4 cup bread crumbs
  • 1/4 cup ice water

Instructions

  1. In a large bowl, mix together the chopped pork liver, pork fat, and onion.
  2. Add the salt, white pepper, allspice, and marjoram to the bowl and mix well.
  3. Gradually add the bread crumbs and ice water to the mixture, stirring until well combined.
  4. Transfer the mixture to a sausage stuffer and fill the casings, tying off the ends to form sausages.
  5. Bring a large pot of water to a boil, then reduce the heat to a simmer. Place the sausages in the water and cook for 1 hour.
  6. Remove the sausages from the water and let them cool completely.
  7. Once cooled, remove the casings from the sausages and transfer the sausage meat to a food processor. Process until smooth.
  8. Transfer the processed sausage meat to airtight containers and refrigerate for at least 2 hours before serving.
