Thuringian Liver Sausage (Thüringer Leberwurst)

Ingredients
- 1 lb pork liver, finely chopped
- 1 lb pork fat, finely chopped
- 1 onion, finely chopped
- 2 tsp salt
- 1/2 tsp ground white pepper
- 1/4 tsp ground allspice
- 1/4 tsp ground marjoram
- 1/4 cup bread crumbs
- 1/4 cup ice water
Instructions
- In a large bowl, mix together the chopped pork liver, pork fat, and onion.
- Add the salt, white pepper, allspice, and marjoram to the bowl and mix well.
- Gradually add the bread crumbs and ice water to the mixture, stirring until well combined.
- Transfer the mixture to a sausage stuffer and fill the casings, tying off the ends to form sausages.
- Bring a large pot of water to a boil, then reduce the heat to a simmer. Place the sausages in the water and cook for 1 hour.
- Remove the sausages from the water and let them cool completely.
- Once cooled, remove the casings from the sausages and transfer the sausage meat to a food processor. Process until smooth.
- Transfer the processed sausage meat to airtight containers and refrigerate for at least 2 hours before serving.
