Thuringian Potato Soup with Sausage (Thüringer Kartoffelsuppe mit Wurst)

Ingredients

  • 1 pound Thuringian sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, cook the sliced sausage over medium heat until browned. Remove the sausage and set aside.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Pour in the chicken broth and add the diced potatoes and caraway seeds. Season with salt and pepper.
  4. Simmer the soup for 20-25 minutes, or until the potatoes are tender.
  5. Use an immersion blender to partially blend the soup, leaving some potato chunks for texture.
  6. Stir in the heavy cream and add the browned sausage back to the pot. Simmer for an additional 5 minutes.
  7. Adjust the seasoning if needed and garnish with chopped parsley before serving.
