Ingredients
- 1 pound Thuringian sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 pounds potatoes, peeled and diced

- Salt and pepper to taste
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, cook the sliced sausage over medium heat until browned. Remove the sausage and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Pour in the chicken broth and add the diced potatoes and caraway seeds. Season with salt and pepper.
- Simmer the soup for 20-25 minutes, or until the potatoes are tender.
- Use an immersion blender to partially blend the soup, leaving some potato chunks for texture.
- Stir in the heavy cream and add the browned sausage back to the pot. Simmer for an additional 5 minutes.
- Adjust the seasoning if needed and garnish with chopped parsley before serving.
