Ingredients
- 500g sauerkraut, drained and rinsed
- 200g smoked sausage, sliced
- 1 onion, chopped
- 2 potatoes, diced
- 1 bay leaf
- 1 tsp caraway seeds
- 1.5L vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion until translucent.
- Add the sauerkraut, potatoes, caraway seeds, and bay leaf. Cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes.
- Add the sliced sausage and cook for an additional 10 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Remove the bay leaf before serving.
