Tian Di He Ye Fan (heavenly Lotus Leaf Rice)
Tian Di He Ye Fan, or Heavenly Lotus Leaf Rice, is a traditional Chinese dish that is not only delicious but also visually stunning. This dish is often served during special occasions and celebrations, and it is believed to bring good luck and fortune to those who partake in it.
Ingredients
- 4 lotus leaves
- 2 cups glutinous rice
- 1 cup diced mixed vegetables (carrots, mushrooms, water chestnuts)
- 1/2 cup diced tofu
- 4 dried shiitake mushrooms, rehydrated and sliced
- 4 slices Chinese sausage (lap cheong), optional
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 cup chopped scallions
- 1 tablespoon vegetable oil
- 1 tablespoon Shaoxing wine, optional
Instructions
- Rinse the lotus leaves and soak them in warm water for 30 minutes to soften.
- Rinse the glutinous rice until the water runs clear, then soak for 30 minutes and drain.
- In a large bowl, mix the soaked rice, diced vegetables, tofu, shiitake mushrooms, Chinese sausage, soy sauce, oyster sauce, sesame oil, salt, and white pepper. Stir in the chopped scallions.
- Heat the vegetable oil in a wok over medium heat. Add the rice mixture and stir-fry for 5 minutes. If using, add the Shaoxing wine and stir-fry for another 2 minutes. Remove from heat and let cool slightly.
- Divide the rice mixture into 4 portions. Place each portion in the center of a lotus leaf. Fold the sides of the lotus leaf over the rice to form a packet.
- Steam the lotus leaf rice packets over high heat for 45 minutes.
- Unwrap the lotus leaf rice packets and serve hot.
