Tian Di Rou (heavenly Pork Belly)

Ingredients

  • 1.5 lbs pork belly
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 2-inch piece of ginger, sliced
  • 2 green onions, chopped
  • 1 star anise
  • 1 cinnamon stick
  • 1/2 tsp five-spice powder
  • 1/2 tsp black pepper
  • 2 cups water

Instructions

  1. Place the pork belly in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove the pork belly and set aside.
  2. In the same pot, combine soy sauce, brown sugar, rice vinegar, garlic, ginger, green onions, star anise, cinnamon stick, five-spice powder, black pepper, and water. Bring to a boil.
  3. Add the pork belly back into the pot. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is tender.
  4. Remove the pork belly from the pot and let it rest for 10 minutes before slicing.
  5. Strain the sauce and return it to the pot. Increase heat to medium-high and cook the sauce until it thickens, about 10 minutes.
  6. Serve the sliced pork belly with the thickened sauce drizzled on top.
