Ingredients
- 2 large eggplants, cut into cubes
- 3 tablespoons vegetable oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green chili, sliced
- 3 tablespoons sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt to taste
- Chopped green onions for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the eggplant, red bell pepper, and green chili to the pan. Cook for 5-7 minutes, or until the eggplant is tender.
- In a small bowl, mix together the sweet chili sauce, soy sauce, rice vinegar, sugar, and salt.
- Pour the sauce over the cooked eggplant and stir to coat evenly. Cook for an additional 2-3 minutes.
- Remove from heat and garnish with chopped green onions.
