Ingredients

  • 2 large eggplants, cut into cubes
  • 3 tablespoons vegetable oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green chili, sliced
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the eggplant, red bell pepper, and green chili to the pan. Cook for 5-7 minutes, or until the eggplant is tender.
  4. In a small bowl, mix together the sweet chili sauce, soy sauce, rice vinegar, sugar, and salt.
  5. Pour the sauce over the cooked eggplant and stir to coat evenly. Cook for an additional 2-3 minutes.
  6. Remove from heat and garnish with chopped green onions.
