Tian Qi Qie Zi (stuffed Eggplant)

Ingredients

  • 4 small eggplants
  • 200g ground pork
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/4-inch thick shell. Chop the eggplant flesh and set aside.
  3. In a bowl, mix the ground pork, chopped eggplant, green onions, garlic, soy sauce, oyster sauce, sugar, salt, and black pepper.
  4. Stuff the eggplant shells with the pork mixture.
  5. Heat the vegetable oil in a pan over medium heat. Place the stuffed eggplants in the pan, stuffed side down, and cook for 3-4 minutes until browned.
  6. Flip the eggplants, cover the pan, and cook for another 8-10 minutes until the eggplants are tender.
  7. Serve the stuffed eggplants hot and enjoy!
