Ingredients
- 4 cups cooked sushi rice
- 1 pound pork tenderloin, cut into small cubes
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 cup pineapple chunks
- 1/4 cup rice vinegar
- 1/4 cup ketchup
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- 4 large seaweed sheets (nori)
Instructions
- In a small bowl, mix together rice vinegar, ketchup, brown sugar, soy sauce, cornstarch, and water to make the sweet and sour sauce. Set aside.
- In a large skillet, cook the pork cubes until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, sauté the bell peppers and onion until they are slightly softened.
- Add the cooked pork back to the skillet, along with the pineapple chunks and the sweet and sour sauce. Cook for a few minutes until the sauce thickens and coats the pork and vegetables.
- Place a seaweed sheet on a clean surface and spread a layer of cooked sushi rice on top.
- Spoon the sweet and sour pork mixture onto the rice, then roll the seaweed sheet into a burrito shape, tucking in the sides as you roll.
- Repeat with the remaining ingredients to make 4 sushi burritos.
- Slice each sushi burrito in half and serve immediately.
