Ingredients
- 1 package of rice noodles
- 2 cups of vegetable broth
- 1 cup of sliced shiitake mushrooms
- 1/2 cup of diced tofu
- 1/4 cup of chopped cilantro
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of grated ginger
- 1/2 teaspoon of turmeric
- 1/4 teaspoon of chili flakes
- Salt and pepper to taste
Instructions
- Boil the rice noodles according to the package instructions. Drain and set aside.
- In a pot, bring the vegetable broth to a simmer. Add the shiitake mushrooms, tofu, soy sauce, sesame oil, ginger, turmeric, and chili flakes. Let it simmer for 15 minutes.
- Divide the cooked noodles into serving bowls and ladle the hot soup over the noodles.
- Garnish with chopped cilantro and season with salt and pepper to taste.
