Tibetan Thukpa Fusion Bowl

Ingredients

  • 1 package of rice noodles
  • 2 cups of vegetable broth
  • 1 cup of sliced shiitake mushrooms
  • 1/2 cup of diced tofu
  • 1/4 cup of chopped cilantro
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of grated ginger
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of chili flakes
  • Salt and pepper to taste

Instructions

  1. Boil the rice noodles according to the package instructions. Drain and set aside.
  2. In a pot, bring the vegetable broth to a simmer. Add the shiitake mushrooms, tofu, soy sauce, sesame oil, ginger, turmeric, and chili flakes. Let it simmer for 15 minutes.
  3. Divide the cooked noodles into serving bowls and ladle the hot soup over the noodles.
  4. Garnish with chopped cilantro and season with salt and pepper to taste.
