Tibetan Tofu Curry With Wild Mushrooms

Ingredients

  • 1 block of firm tofu, cubed
  • 2 cups of wild mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of curry powder
  • 1 can of coconut milk
  • 2 tablespoons of soy sauce
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.
  2. Add the wild mushrooms to the pan and cook until they start to release their juices.
  3. Stir in the curry powder and cook for another minute.
  4. Pour in the coconut milk and soy sauce, then add the cubed tofu. Simmer for 15-20 minutes, until the tofu is heated through and the flavors are well combined.
  5. Season with salt and pepper to taste.
